Vegan Ranch Dressing

We stopped eating dairy a few months ago and I’m not about to say it’s been easy.  I’ve gone back and forth over the years but I always feel better when dairy is out of my life.  So I decided to draw the imaginary line in that imaginary sand… and here’s to not crossing it!  This recipe for vegan ranch dressing comes out of the desparation of NEEDING ranch dressing.  It was my favorite salad dressing (which is amazing because I can’t stand dill in just about anything else).

Anyway, you might need to halve this recipe if you don’t have a big old heavy duty vitamix.  I like to make up a big old batch and freeze it in little 4 oz jelly jars or old baby food jars.  Then it’s already neatly packaged to send in my husband’s lunches.  This also helps guarantee I’m never REALLY out of salad dressing.  Have you ever considered giving up milk and cheese?
