My husband totally rocked in the kitchen this weekend. On Sunday he stayed home with our grumpy daughter who needed a nap while I went to church with our son. Part of the deal was that he would make lunch. He still agreed and made cornbread for the first time. When he told me he was going to try some recipes for dinner I smiled and was glad to hand over the baton once again. Our backyard garden has been producing some lovely greens the past 1.5 months so he incorporated those into his meal. One part of the meal was a smoothie. Many times he experiments with recipes in the Vitamix blender and they are……ummm….not so drinkable. This recipe was the complete opposite. Not only was this more than drinkable, it was scrum-dilly-umcious. Plus, it is super healthy and kid approved. This is a GREAT opportunity to sneak in green stuff for your children. My husband also commented that all of the ingredients he used were local. The kale was picked from our garden in the backyard, the honey was from a local bee farm, the blueberries were picked (and frozen) last season at a nearby farm, and the ice, well that is local, too! Thanks, hubs, for the great smoothie. Looking forward to making it again.

Oh My Good!! Blueberry Kale Smoothie

1 C. blueberries

8-12 medium kale leaves (including stems)

2-3 TB. of honey

2 C. ice

3 C. water

Blend!

 

 

If you like a smoothie (thicker) consistency use less water. If you would like a juice consistency use more water. Since I waited until later to try mine, my smoothie was more like a juice. Personally, I liked it that way…..so whatever fits your fancy. Enjoy!!

  1. Wow. Now I need me some of that! It sounds delicious. Do you think a regular blender would chop the kale up enough or should it be pre-chopped before blending? Can’t wait to try!

    • Not sure, but it is worth a try. I would at least pre- chop the stems first. Let me know how it goes.
